What is Sodium Propionate?

Sodium propionate is a food preservative and mildew preventer permitted by GB2760-1996 of my country. It is used in cakes and cheeses. It can be used alone or in combination with propionic acid and sorbic acid. It can also be used as a viscous substance inhibitor for beer, etc.; feed additive, etc.

It has the appearance of colorless, transparent crystals or granular crystalline powder, odorless or with a slight acetic acid-propionic acid-butyric acid smell. It is stable to light and heat and is easily deliquescent in humid air. It is easily soluble in water (100 at 15°C, 150 at 100°C), soluble in ethanol (4.4 at 15°C, 8.4 at 100°C), slightly soluble in acetone (0.05 at 15°C), most active under acidic conditions, produces free propionic acid, has antibacterial effects, has a wide range of antibacterial effects on molds, yeasts and bacteria, and is ineffective against yeast. Its antibacterial properties are the same as those of propionic acid.

Sodium propionate can be used as a preservative and mildew preventer for cakes, soy products, dumpling wrappers, wonton wrappers, raw noodles, cheese, etc. In the process of canned bayberry, it is used to soak bayberry. In beer production, it can inhibit the formation of unfavorable sticky substances.

Sodium Propionate Uses

Sodium propionate is a food preservative allowed for use in accordance with my country’s GB2760-2011 regulations. It is used in cakes, bean products, etc. It can be used alone or in combination with propionic acid and sorbic acid. The main uses of sodium propionate preservatives are:

  1. Sodium propionate is an acid-type food preservative, and its antibacterial effect is affected by the pH value of the environment. It has a strong inhibitory effect on various molds, Gram-negative bacilli or aerobic bacilli in acidic media. It has a strong inhibitory effect on preventing the production of aflatoxin, but is almost ineffective against yeast. In the food industry, it can be used to preserve cakes, with a usage of 2.5g—kg (in terms of propionic acid).
  2. Cosmetic preservative. It has a wide range of antibacterial effects on molds, yeasts and fungi. The antibacterial effect is particularly obvious in acidic solutions. The amount added to cosmetics is usually no more than 2%.
  3. Other uses such as: insecticide, mildewproof agent, masking agent in leather making to improve the alkali resistance of leather and the uniformity of tanning.

Sodium propionate is made by neutralizing propionic acid with sodium hydroxide or sodium carbonate. Propionic acid reacts with sodium hydroxide or sodium carbonate until the pH value is neutral to obtain a sodium propionate solution, which is decolorized, filtered, concentrated under reduced pressure, cooled and filtered, sprayed, and dried to obtain the finished product. Although sodium propionate has a lower ability to inhibit mold than calcium propionate, it does not affect the effect of chemical leavening agents, so sodium propionate is more widely used in foods such as bread than calcium propionate. Calcium propionate has good water solubility and is relatively convenient to use.
