What is Sodium gluconate?

As a new type of functional flavoring seasoning, sodium gluconate can impart sour taste to food, improve food taste, prevent protein denaturation, mask bad bitterness and astringency, and replace salt to prepare low-sodium and sodium-free food. In addition, it has the characteristics of non-toxicity, non-deliquescence, good stability and chelating performance, and a wide range of raw material sources. It has attracted much attention, and some new preparation technologies and applications have emerged one after another.

In 2012, approved by my country’s health department, it was included in the catalogue of new food additives. Sodium gluconate has been produced and used for nearly three decades. Especially in recent years, with the application of sodium gluconate in new fields such as retarders and water reducers in the construction industry, its market demand has shown a trend of rapid growth. Among them, the production of sodium gluconate by fermentation method has taken the leading position in the sodium gluconate industry by virtue of its mature technology, mild process conditions, simple technical route and low product cost. China is the world’s most important producer and exporter of sodium gluconate. It is expected that the production and application of sodium gluconate will continue to grow steadily in the coming period.

Sodium gluconate Uses

  1. Sodium gluconate used as brightener in nickel-iron alloy electroplating. When used alone, it has the advantages of clarifying the plating solution, brightening the surface of the plated parts, and fine and leveling the crystals. The dosage is 0.1-0.2g/L.
  2. Food additives, electroplating complexing agents, water quality stabilizers, color leveling agents in printing and dyeing industries, steel surface treatment agents, etc. are used in the pharmaceutical industry.
  3. Sodium gluconate is used as a corrosion and scale inhibitor in circulating cooling water system, used in electroplating and metal cleaning, and also used in pharmaceuticals.
  4. Nutritional supplements, chelating agents, yeast foods.
  5. Sodium gluconate is used as a scale and corrosion inhibitor in industrial water treatment, and it has a good effect of compounding with aluminum.

Preparation of Sodium gluconate?

The metered amount of calcium gluconate was added to the reaction vessel and an aqueous solution of sulfuric acid was added with stirring. After stirring for 1 hour, it was left to stand for filtration. The filter residue was CaSO4 and was removed. The filtrate was added to a neutralization vessel and neutralized by adding an appropriate amount of aqueous Na2CO3 solution. Concentrate, filter, dry, test qualified packaging products. The glucose is fermented and neutralized with sodium base.
The metered amount of gluconic acid was added to the reaction vessel, neutralized with stirring and added with a slight excess of aqueous Na2CO3, and stirred at 50-60[deg.] C. for 2 hours. Concentrate under reduced pressure, cooling, crystallization, filtration and drying to get the finished product.
