The naturally occuring isomer is the L-form which has been found in apples and many other fruits and plants. Selective α-amino protecting reagent for amino acid derivatives. Versatile synthon for the preparation of chiral compounds including κ-opioid receptor agonists, 1α,25-dihydroxyvitamin D3 analogue, and phoslactomycin B.

Production methods

1. T3) in the 500L fermentation tank, ventilated and fermented 40h, the yield of acid was 4.4%~4.95%, and the conversion rate of sugar was 68%~75%.


L-malic acid is used in food, medicine, daily chemical industry and other industries as follows:

(1) food industry: it is used for the processing and distribution of beverages, dews and fruit juices, and also for the manufacture of confectionery, jam, etc., for food and antibacterial and preservative effect. It can also be used in the PH regulation of sour milk fermentation.
