What is 1-Octen-3-Ol?
1-Octen-3-ol, abbreviated as octenol, also known as mushroom alcohol, is a chemical substance that can attract mosquitoes and other insects. It is found in human respiration and sweat. It has been thought that DEET works by blocking the octaenol odor receptor of insects. Recent evidence in Anopheles gambiae and Culex quequinfasciatius mosquitoes suggests that DEET reduces the volatility of 1-octen-3-ol, thereby reducing human attractiveness.
Octenol is produced by several plants and fungi, including edible mushrooms and Melissa. Octenol is formed during the oxidative decomposition of linoleic acid.
This is also a wine defect, defined as cork contamination, which occurs in wines made from contaminated grape clusters.
1-Octen-3-Ol Uses
- GB2760-1996 stipulates that 1-octen-3-ol is a permitted edible spice. Mainly used to prepare mushroom and earthy flavors.
- 1-Octen-3-ol is used in daily chemicals and food flavors, and can also be used to formulate artificial essential oils, reconstituted essential oils or ester flavors.
- 1-Octen-3-ol is sometimes used in combination with carbon dioxide to attract insects in order to kill them with certain electronic devices.

- By selective reduction of 1-octen-3-one
Biochemically, 1-octen-3-ol is produced by the peroxidation of linoleic acid, catalyzed by lipoxygenase, and then cleaved with the help of hydroperoxide lyase. The reaction takes place in cheese and is used in biotechnology to produce (R) – isomers.
