Main application:

Sodium trimetaphosphate used as starch modifier in the food industry, used in flour, pastry products, fruit juice turbidity prevention agent, water retention agent, water softener, meat binder, dispersant, stabilizer (used for ice cream, cheese, etc.), can prevent food discoloration and vitamin C decomposition, also used as water softener.  Sodium trimetaphosphate can also be added to plasterboard, and used for the production of low-density washing powder, but also for the production of drying bleach, automatic dishwashing detergent, sodium tripolyphosphate hexahydrate and the mixture of sodium tripolyphosphate hexahydrate and inert inorganic salt.

Sodium trimetaphosphate is used in the production of crosslinked starch.

Starch is not only the main component of human food, but also an important raw material for food industry, fermentation industry and light industry.  With the development of science and technology, the processing technology of all kinds of products has been improved, and many new products requiring starch as raw materials have more and more strict requirements on the properties of starch. The original starch can not adapt to some processing needs, and it is necessary to denaturate the original starch.  There are physical and chemical methods for denaturation of raw starch, while crosslinked starch is treated with crosslinking agent containing two or more functional groups to form crosslinked structure between its molecules, so as to change the physical and chemical properties of raw starch.  Crosslinked starch has the same particle morphology as original starch, but the existence of crosslinked bond enhances the binding effect of starch particles, improves the anti-aging and freezing stability of starch, and thus has better properties than original starch, and can exist in a more stable state.  After crosslinking, starch in food can be frozen at low temperature for a long time or frozen and melted repeatedly, but the original structure of food can still remain unchanged. 

The process of cross-linking starch with sodium trimetaphosphate is hydrolyzed to sodium tripolyphosphate and regenerated into disstarch phosphate ester.  The conversion of sodium trimetaphosphate to sodium tripolyphosphate (PH 9.2 — 10 in 1% pentasodium solution) requires hydrolysis in an alkaline environment.  And you end up with a distarch phosphate that has a PH of 11.  According to the principle of equilibrium, the required environment should be alkaline. 

Crosslinked starch can be prepared by esterification of P – 0 bond of sodium trimetaphosphate with alcohol hydroxyl of starch in aqueous solution.  In industry, sodium trimetaphosphate is used as a crosslinking agent to produce crosslinked starch. Its process has the characteristics of high efficiency, high conversion rate and low cost, which is suitable for processing different products.
